Italian Honey Balls
From the Kitchen of Rose Mauro

Ingredients:
4 cups sifted flour (sift into
     measuring cup to measure)
4 tsp. baking powder
1/2 c. sugar
1/2 c. oil
4 whole eggs
2 tsp. vanilla


Method:
Mix flour, baking powder, sugar in a bowl. Mix eggs, vanilla and oil in another bowl, then add to flour mixture. Mix with hands then knead until it all comes together and dough is shinny. Add flour to hands if sticky. Heat a large pot with oil - no more than half way up the pot. Take a piece of dough. Roll one piece at a time into a rope about 1/2 inch thick. Cut into pieces about 1/2 inch long. Don’t worry if they look like little pillows. Place a test piece into oil (be very careful).  Adjust temperature of oil is too hot or too cool.  (The flour in the dough will cause foam, so be careful it does not flow over top of pot.) Lower heat to adjust this. Piece will drop to bottom and then rise to top. Cook until golden brown. Use a slotted spoon to lift out of oil. Cool on paper towels. When cooked, you can dust with confectioners sugar, or heated honey.
