Stuffed Peppers
From the Kitchen of Rose Mauro

Ingredients:
4 green peppers
1 c. ground beef
1 c. canned tomatoes
1 Tbsp. olive oil
1 tsp. butter
bread crumbs
salt and pepper to taste


Method:
Cut stems from peppers; remove seeds, parboil 3 minutes and drop into cold water. Combine tomatoes and meat with enough crumbs to make a thick stuffing. Heat stuffing in frying pan with oil and butter, and season to taste. Fill peppers and put into pan just large enough to hold them upright. Pour 1 cup hot water into pan and bake 20 to 30 minutes at 350 °.
