| 2 onions 4 stalks celery, chopped 1 green pepper, chopped bacon fat 2 pkg. sweet Italian sausage thyme 3-4 eggs stuffing cubes |

Method:

| Brown onions, celery and peppers in bacon fat. In a separate pan fry sausage, out of casing, until cooked. Add a little thyme. Mix together with onions, pepper and celery. Beat eggs and mix with above ingredients. Add stuffing cubes. Make just before stuffing turkey. Remaining can be baked in casserole dish. |
